Gobbytraveller’s Yang Chow Fried Rice

Ingredients:

  • 2 cups of boiled rice (see my cooking tip on How to Make the Perfect Fried Rice)
  • 2 eggs
  • 3 tbsp spring onion, chopped
  • 80g prawns
  • 90g char siu, diced (see my recipe here or you can replace with diced pancetta)
  • 1/3 tsp salt
  • 2 tsp soy sauce

Method: 

1. Add a pinch of salt to the eggs and whisk.

2. Heat wok on high-heat, once it is hot add 1 tbsp oil then add prawns and cook (make sure the prawns are dry, remove any excess water with a paper towel. Remove and set to one side.

3. Add char siu, remove once it is hot (char siu is already cooked so this process is just to reheat it). If you are using diced pancetta, cook it in the wok. Remove and set to one side.

4. Add 1 tbsp oil then add egg until it is around 60% cooked. Add rice and use the spatula to break up the rice. Keep stirring the rice to stop the base from burning. The rice should not be clumped together and should be fluffy.

5. Add prawns and char siu and mix thoroughly. Add salt and soy sauce.

6. Add spring onion and mix thoroughly.

Ready to serve.
