Chinese Prawn Omelette

INGREIDENTS: 

  • 2 eggs
  • 1 tsp cornstarch
  • 80g cooked prawns
  • 1/4 tsp garlic (crushed)
  • 1/2 tsp chopped spring onion
  • 1/5 tsp white pepper

METHOD:

1. In a small bowl, dissolve cornstarch in 1/2 a tsp of water. Make sure the cornstarch in fully dissolved, you don’t want any lumps in the egg.

2. Beats eggs and white pepper with the cornstarch mixture and set aside.

3. Heat a dash oil in a wok/frying pan and add garlic once the oil is hot. Allow the garlic to slightly brown, then add cooked prawns and stir fry.

4. Add egg mixture to the prawns then sprinkle the copped spring onions on top. Fry until golden brown then flip and cook the other side.

5. Once cooked, plate up and serve. Season accordingly with salt or soy sauce (I find cook prawns are sometimes already salted so don’t need additional salt/soy sauce).

Gobbytaveller’s Tip: Best served with boiled rice or fancy something lighter, goes great with a salad.
