Cinnamon Fruit Crumble Recipe

Serves 4

INGREDIENTS:

Crumble

  • 100g plain flour
  • 100g Oats
  • 80g white sugar
  • 80g butter
  • 1 teaspoon (generous heap) of cinnamon

Fruit mixture

  • 4 small/medium nectarines (I used nectarines but you can use plums or apples too)
  • 40g sugar
  • 1/4 cup of water
  • 1 teaspoon (generous heap) of cinnamon

METHOD:

Crumble

  1. Melt butter in a pan or microwave.
  2. In a large mixing bowl combine flour, oats, sugar and cinnamon and mix well. Add in melted butter. Rub in with fingertips until mixture comes together in small clumps. Leave to the side.

Fruit mixture

  1. Combine sugar and cinnamon in a bowl. Add nectarines into a pan, add sugar and cinnamon mixture and cook over medium heat. Add water and place lid on pan. Cook until the nectarines are soft.

Baking

  1. Pre-heat oven to 180ĀŗC (375ĀŗF ) and place rack in the centre of oven.
  2. Grease baking dish and transfer mixture to baking dish.
  3. Sprinkle topping evenly over fruit mixture. Bake for approx 50 minutes, until fruit mixture is bubbling thickly and topping is golden brown.
  4. Cool for 20 minutes before serving.

Serve warm with vanilla ice cream or with vanilla custard.
