Posh Filet-O-Fish

INGREDIENTS:

Fish Fingers 

  • 1 egg
  • 1 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 piece of cod fillet, sliced into 3/4-inch-wide strips
  • oil for deep frying (neutral oil, i.e. sunflower oil, vegetable oil, rapeseed oil, etc.)

Tartar Sauce 

  • 1 garlic clove, finely grated
  • 1/4 cup mayonnaise
  • 1 tbsp capers (chopped)
  • 1 tbsp cornichons (diced)
  • 1 tsp chives (finely chopped)
  • 1 tsp fresh lemon juice
  • 1/2 tsp Dijon mustard
  • 1/2 tsp whole grain mustard
  • Kosher salt, freshly ground pepper

Assembly

  • 1 brioche bun (halved)
  • 1 slice Kraft cheese singles

METHOD:

Tartar Sauce 

1. Mix garlic, capers, cornichons chives, lemon juice mustard and maonnaise together. Season with salt and pepper.

Fish Fingers

1. Season fish with some salt and pepper.

2. Beat egg in a shallow medium bowl. Place breadcrumbs and flour in 3 separate shallow medium bowls.

3. Carefully coat each piece of fish in flour and dip it into the egg, ensuring it is fully coated in egg, allow any excess to drip back into the bowl.

4. Place fish into breadcrumbs, pressing to adhere. Transfer to a plate. Repeat for the pieces of fish.

5. Use a deep fat fryer or fill a 3/4 of the pan of oil and heat. Once hot, add fish and cook until golden brown and cooked through.

6. Line baking tray with paper towel and place fish fingers on tray once cooked; season with salt and pepper.

Assembly 

1. Slice brioche buns in half and toast.

2. Top with fish, cheese and a generous amount of tartare sauce.

3. You can get creative and add some salad too.
